My Guilt-free Treat: Dr. Fuhrman’s Goji Walnut Squares with Chocolate Drizzle

Just over three weeks ago I made the decision to change how I eat. As a baker and lover of all things sweet, this wasn’t an easy decision. However, after just one week of eating vegetarian according to the principles of Dr. Furhman’s Eat to Live book, I knew I had made the right decision.

It wasn’t about losing weight – although the quick farewell to a double-chin was most welcome – but rather more about feeling better head-to-toe, and knowing what I was eating was going to have long-term benefits. A diet with mostly vegetables, fruits, beans and seeds/nuts has given me new energy. I sleep more soundly, wake up more refreshed and my debilitating neck pain is not nearly so debilitating. With some careful planning and a bit of will power, I feel like I’m on a path that will mean more success in all facets of my life.

And the best part is I didn’t have to let go of my passion for baking and the pleasure of eating the finished product. With clever creations from the Eat to Live Cookbook, I’ve found a renewed pleasure in baking. My favourites so far are black bean brownies (I’ll share the recipe in a future post) and goji walnut squares with chocolate drizzle. I made the latter today with great success thanks to a new food processor (an Airmiles redemption win).

The recipe is easy, tasty and it’s also no-bake! Try these delicious treats and enjoy the healthful benefits of walnuts and goji.

Ingredients:
1 1/2 cup oats
1 cup walnuts
1 cup raw almonds
1 tsp cinnamon
3/4 cup chopped dates
1/2 cup water
1 banana
1 tbsp vanilla extract (I used only 1 tsp)
1/2 cup goji berries
2 ounces unsweetened dark chocolate

Directions:
In a high-powered blender, blend the oats until a flour forms. Add to a large bowl and repeat the process for the walnuts and almonds, being sure not to over-process them as you don’t want the oils to release.

Add to the bowl and gently break apart any clumps with your fingers. It’s okay if a few walnuts or almond pieces remain.

Stir in the cinnamon.

Add dates and water to blender and process until a slurry forms. Add banana and blend until well combined.

Add date mixture to dry ingredients and mix until no flour remains. Stir in vanilla and goji berries.

Line an 8-inch square pan with aluminum foil or parchment paper. You can also grease it lightly with a tiny amount of olive oil instead (that worked for me). Scoop the dough into the pan. Use a spatula to spread evenly. Place in the freezer for 30 minutes.

Place the unsweetened chocolate in a microwave-proof bowl and heat in the microwave for 1 minute, stir, and heat for another 30 seconds or until completely melted.

Remove pan from freeze. Using a small spoon, drizzle the chocolate to add a decorative touch (I poured it into a Ziploc baggie so I could drizzle with precision). Cut into squares.

Store in the freezer for a guilt-free snack. They can be eaten straight from the freezer or heated in the microwave for 30 – 45 seconds.
